Tasting Notes
A seductive bouquet of fresh mulberries and cinnamon spice give way to fragrant white pepper and lavender bush. The palate is soft and juicy with red cherries, sour plums and savoury notes of salty liquorice and wet earth. A velvety structure with lingering flavours makes this wine a crowd pleaser in any situation!

Wine Making
The fruit for this wine comes from our Hazel’s and Calgardup Brook vineyards in southern Margaret River. Whole berries were transferred by gravity into 5 tonne concrete and wood fermenters. A small portion of the fruit was fermented with whole clusters for additional spice and aromatic lift. Fermentation underwent at low temperatures and gentle extraction was carried out by pumping over twice daily. After 14 days on skins the juice was pressed gently and transferred to large format oak casks for 14 months maturation.
Vintage Report
The 2021 season started out with a cooler, wet spring which resulted in a lower fruit set for some varieties such as Chardonnay. We experienced above average rainfalls in early spring, meaning extra effort was required in our organically grown vineyards to mitigate disease pressure. Spring rolled into summer with long warm and dry days, however a couple of rain events in February and March required extra effort from our committed vineyard team in terms of canopy management and fruit selection at harvest. The 9th of April marked the end of harvest with Cabernet Sauvignon from our Hazel’s Vineyard being picked in early hours of the morning and showing fragrance and an elegant tannin profile in true Claret style.
